Dahi Ke Malpuae : Indian Food & Cooking Recipes

Ingredients
4 tablespoon wheat flour (not maida)
2 tablespoon plain yogurt
water as needed
oil to fry
3 cup water
4 cup sugar
A pinch of saffron

Cooking Instructions
Syrup : Mix water and sugar in the pan and put it on high heat for 5 min then put it on medium heat till its start getting thicker.Add saffron to it.Check by dipping a spoon in it .Do the Tar test.Dip the spoon in the pan and raise it a little high above the pan so the syrup drops back in the pan,while the syrup drops back in the pan look back near the spoon if you can see any thread appearing near the spoon.It should be one thread and not more.Keep the syrup aside.
Malpuae : Mix flour ,yogurt and 4-8 tablespoon of water.mixture when should wrap on the spoon but it should not stick.use more water if neede.Heat the oil in pan.Pan should be less then half Full by the oil.Heat the oil on medium high.when its quite hot take the mixture in tablespoon and pour in the center of the pan.Reduce the heat to medium. It will instantly spread .if it sticks to the pan and don't spread add a little more water or if spread out very very thin add a little more flour. fry it from both side till its golden brown and crisp.While pouring the mix keep the gas on medium high heat and reduce it while frying to make it crisp.Take it out .before serving put it in hot syrup for 5 min .
